8 Plum California
4 Wholemeal bread sliced
2 Avocado
4 Eggs
a little oil
pinch of salt
Instructions
Peel and cut the avocado into thin slices and set aside. Beat the eggs in a bowl and sprinkle with salt.
Separately, cut the California Prunes into small pieces and add them to the mixture. Heat a frying pan with a little oil, pour the eggs and cook while stirring with a fork. Meanwhile, toast 4 pieces of whole-grain bread.
