Ingredients
  • 500 g mushroom chanterelles
  • 5 shallots
  • a handful of parsley, fresh
  • 8 eggs
  • 80 ml of cooking oil
  • pinch of salt
  • peper qb
  • 100 g grated cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 garlic clove
  • handful of triplicate
  • a handful of spring onions
Instructions
  1. First, preheat the oven to 190 degrees C.
  2. Peel the mushrooms and cut them roughly.
  3. Wash and clean the leeks and cut them about 5 cm long.
  4. Rinse the parsley, dry and roughly chop.
  5. Beat the eggs by adding cream, salt, pepper, parsley, and cheese.
  6. Heat the oil and butter in a frying pan.
  7. Saute the mushrooms over high heat, remove from the pan, and set aside.
  8. Saute the garlic slices and leeks.
  9. Then add the mushrooms and beat the eggs.
  10. Put the pan in a hot oven and cook for 10 minutes.
  11. When the omelet is ready, remove it from the oven.
  12. Sprinkle with triplicate (sea porcelain) and serve your chopped omelet.
