For Mashed Stuffed Butternut Squash Pie
  • 2 cups cooked butternut squash and smoothed
  • 1 tbsp butter
  • 1 cup Brown Sugar
  • 1 cup Evaporated Milk
  • 2 eggs
  • 3 tsp Vanilla
  • 2 ½ tsp Pumpkin Pie Spice
  • 1 ½ tbsp cornflour
  • ½ tsp Salt
  • 1 un-baked 9" pie shell
For the pie skin
  • 315 g all-purpose flour
  • 2 tsp granulated sugar
  • 1 tsp salt
  • 115 g cold unsalted butter
  • 95 g cold vegetable shortening
  • 120 ml of ice water
To make pie skins
  1. Beat the flour, sugar, and salt until well combined.
  2. Then, add the cold butter and cold vegetable shortening.
  3. Using a fork, process the dough until it has small crumbs the size of peas.
  4. After that, pour 1 tbsp of ice water slowly and stir until the dough merges.
  5. Remove the dough to a surface that has been sprinkled with flour.
  6. Next, cut the dough into 2 pieces and flatten it into 2 discs.
  7. Cover each one using plastic wrap and chill for about 1 hour.
  8. Roll the dough up to 12" in diameter, transfer the dough to a 9" pie plate.
  9. Gently put, cut the rest of the dough, and garnish the edges.
  10. Coat the pie dough with baking paper or foil, making sure to cover the bottom and sides.
To make Mashed Stuffed Butternut Squash Pie
  1. In a bowl, put the warm squash puree and melt the butter.
  2. Slice the brown sugar or puree so that there are no blobs.
  3. Add the rest of the ingredients in sequence, whisking until everything is well mixed.
  4. Pour into the base layer of the 9" pie.
  5. Bake for about 1 hour in an oven with a temperature of 350 degrees. Until golden brown, and make sure the middle is cooked.
  6. Rest the pie for 10 minutes until cool.
