Ground Beef and Cheese Enchilada Recipe is a very popular dish in Mexico. Usually, this is always served for snacks.
Ingredients
- 15 ml canola oil
- 250 g extra lean ground beef
- 1 red pepper chopped
- 125 ml onions chopped
- 5 ml cumin
- 1 ml cayenne pepper
- 150 ml finely grated Tex-Mex cheese
- 75 ml sweet onion barbecue sauce and chipotle
- 60 ml chopped fresh coriander leaves
- 4 large tortillas
Instructions
Step one
- Preheat the oven to 200°C.
- Grease a baking sheet measuring 20 cm (8 inches) with a little oil.
- Heat oil in a large skillet.
- Put ground beef, peppers, onions, cumin, and cayenne pepper.
- Once the meat is cooked add 125 ml of cheese, half the barbecue sauce, and 3 tbsp chopped coriander leaves.
Step two
- Pour the mixture evenly in the middle of the tortilla.
- Then fold the sides and roll them tightly.
- Place the enchiladas on a baking sheet, sprinkle with the rest of the barbecue sauce and cheese on top.
- Bake the enchiladas until the cheese melts and froths, about 10 minutes.
- Garnish with coriander leaves.
